Mark DeRespinis, owner of Esoterra Culinary Garden, produces some of the highest quality produce in the Front Range. He has the good fortune of supplying not only the top restaurants, but his family as well.

Originally from Italy, spigarello is a coveted heirloom vegetable as a cross between broccoli and kale. When Mark’s daughter first attempted to pronounce “spigarello,” it quickly became one of the farm favorites. I had the pleasure of turning this gorgeous vegetable into a tee worn by their farm crew and chefs alike.
